Steam Modak (Ukdiche Modak) :

Materials:
Ingredients For Steaming  (Ukad)

1 cup rice flour (modak flour).

1/2 tbsp sugar.

A pinch of salt.

1 cup water.

1 cup milk.

1 tbsp ghee.

Ingredients For Modak Coconut Filling:

1 bowl of grated wet coconut.

A little more than half a bowl of grated jaggery.

1 tbsp of poppy seeds.

2 tbsp of ghee.

Finely chopped cashews, almonds 2/3 tbsp.

cardamom and nutmeg powder half a small tbsp.

Action:

Modak filling :

Heat 2 tbsp of ghee in a pan.

After the ghee is heated, fry 1 tbsp of poppy seeds, finely chopped  2/3 teaspoon of cashew nuts, almonds in the ghee for 1 minute.

After saute poppy seeds and cashews and almonds for 1 minute, add 1 cup of grated wet coconut, a little more than half a cup of grated jaggery.

Roast this mixture on low flame until jaggery dissolves.

After the jaggery dissolves, add half a teaspoon of cardamom and nutmeg powder and mix it.

And cool this mixture. 

Modak Steaming (Ukad):

In a pan take 1 bowl of water, and 1 bowl of milk, after this mixture becomes a little warm, add 1/2 tbsp of sugar, a pinch of salt, and 1 tbsp of ghee.

When it boils, add 1 bowl of rice flour (modak flour.)

And mix the mixture slowly on medium flame.

After mixing the mixture, turn off the flame and keep the mixture covered for 10 minutes.

After 10 minutes, take the flour mixture on a plate and knead it slowly.

Knead the flour well for 5/6 minutes.

After kneading the dough, make small balls of this dough.

Apply some ghee on all sides of the modak mould.

Spread 1 ball of dough evenly from all sides of the mould with your fingers.

Add 1 tbsp of Coconut Filling.

Press the Coconut Filling little by little.

After the Coconut Filling, take 1 small ball of dough and put it to cover the coconut filling in the modak.

Remove the excess dough and flatten the lower side of the modak.

The modak should be taken out of the mold slowly. (All modak should be prepared in the same method.)

Heat 1/2 glass of water in a steamer to steam modak.

After the water heats up, on a steamer tray Keep wet cotton napkins, and place the Modak on top of these cotton napkins.

Close the lid and steam the modak for 15/20 minutes on medium flame.

After 20 minutes turn off the gas and keep the modak in the steamer for 5 minutes.

After 5 minutes take the modak in a dish.

Tips: 

To make modak, you can use modak rice flour, which can easily be available in the market, or you can use homemade rice flour.

While measuring bowls, take the one same bowl every time. (Given ingredients are measured in the one same  bowl, accordingly, you should measure the ingredients with the one same bowl for modak prepared properly.)

If you want the modaks colorful. when a mixture of milk and water is boiled then add the food color of your choice and mix it.

While kneading the dough, If your hands feel hot, put your hands in cold water and then knead the dough slowly.

If kneading the dough for 5/6 minutes but the dough is still hard, add little ghee or little warm water and knead the dough.

Cover the dough balls with a wet napkin to prevent the dough from drying out.

When 5/6 modaks are left to be made, add 1/2 glass of water to the steamer and cover a lid, heat the water. 

If you feel that modak cotton will stick, apply some ghee on the bottom side of the modak.

When place the modak on top of cotton napkins made shower they keep a little distance between each modak. otherwise, modak will stick to each other.

While steaming the modak you can garnish the modak with 1/2 drop of saffron milk.
